Aims
In addition to teaching how to make ice cream, the ice cream maker course, which takes place in Milan, aims to train professionals capable of promoting the culture of Italian ice cream, one of the gastronomic excellences of our country. Giving the right value to artisanal gelato, the one made by hand with excellent raw materials, means knowing its secrets, rules and regulations, but also knowing how to make quality choices. The ice cream maker is a professional able to produce ice cream, working on the entire manufacturing process in compliance with food and hygiene standards.
The study plan
The study plan of the ice cream maker course includes theoretical and practical lessons to learn how to carry out both manual processes and through the use of machinery and equipment, mixing, pasteurizing, homogenizing the ingredients according to the recipes, making a correct maturation, freezing and hardening of the product. The ice cream maker course will allow you to apply specific techniques to practice the profession in artisan workshops for the production of ice cream and ice cream parlors.
